Primitivo di Manduria: what it is, what it costs and what to pair it with
Share
Primitivo di Manduria is the best-known red wine of Puglia, in Italy and abroad. Soft, rich in fruit and generous in alcohol, it tells of the southern heat and the red earth of Salento. In this guide we look at what it is, why it is called that, how it tastes, what it costs and what to pair it with, and which Primitivo wines we make at Cantina Albea.
What is Primitivo di Manduria
Primitivo di Manduria is a red wine with a Denominazione di Origine Controllata, recognised in 1974. It is made from at least 85% Primitivo grapes in an area between the provinces of Taranto and Brindisi centred on Manduria. The same area also produces Primitivo di Manduria Dolce Naturale DOCG, the sweet version made from grapes left to overripen.
Why it is called Primitivo
The name comes from the variety's precocity: Primitivo ripens earlier than many other grapes, so it is among the first to be harvested, already between late August and early September. Hence the name, linked to the old Italian word «primaticcio», early ripening.
Primitivo and Zinfandel: the same grape
DNA studies have shown that Puglia's Primitivo and California's Zinfandel are the same variety, both descended from an ancient Croatian grape. The same genetic heritage took different paths: in Puglia it gave warm, Mediterranean wines, in California reds in a more international style.
Manduria and Gioia del Colle: two sides of Primitivo
Primitivo has two historic areas in Puglia. Around Manduria it grows on the plain, near the sea, on red soils and in a very hot climate: the wines are full, soft and rich in ripe fruit. In Gioia del Colle, on the Murge plateau, the vineyards sit higher and enjoy wider temperature swings between day and night: the wines are fresher and tauter. We work with both, with our Primitivo di Manduria DOC and with the Primitivo wines from our Gioia del Colle vineyards.
How Primitivo di Manduria tastes
In the glass it has a deep red colour. The nose is dominated by cherry, plum and sour cherry, sometimes with notes of dried fruit, spice and tobacco when the wine ages in wood. On the palate it is soft and enveloping, with sweet tannins and a high alcohol content, often around 14% or more.
How much does Primitivo di Manduria cost
Prices vary a lot: there are bottles under 10 euros and riservas above 50. The difference comes from the selection of the grapes, the age of the vines, any ageing in wood and how long the wine is aged. Our Primitivo di Manduria DOC, which ages 8 months in wood and another 4 in the bottle, costs 16 euros in our shop (October 2026 price).
What to pair Primitivo di Manduria with
It is the natural partner of Puglia's meat dishes: orecchiette or maccheroni with ragù, bombette, lamb and grilled meat. It also works well with cured meats and aged cheeses such as canestrato pugliese. Serve it at 16-18 °C, in a large glass that lets the fruit breathe.

Frequently asked questions
Is Primitivo di Manduria a sweet wine?
No, Primitivo di Manduria DOC is a dry wine, although its ripe fruit and softness can give an impression of sweetness. The sweet version is Primitivo di Manduria Dolce Naturale DOCG.
What is the difference between Primitivo di Manduria DOC and Primitivo IGP Puglia?
The DOC sets a defined production area around Manduria and precise rules on the grapes and winemaking. The IGP Puglia covers a wider regional area and leaves the producer more freedom.
At what temperature should Primitivo be served?
Between 16 and 18 °C. Warmer, it feels heavy; colder, it closes up its aromas.
